- Pickled gari or sushi ginger is usually eaten with sushi and it is part of sushi.  It helps you enjoy more the taste of fish and a variety of different sushi rolls.

 

-  The best raw gingers are chosen to make the product a good quality due to its structure (less cellulose)  and its light spicy.  After, It is cut into very thin slices, then marinated in sugar and vinegar solution. The ginger is slightly pink from the ginger root.
